New Zealand Christmas
One of my favourite Christmas Recipes is
Iced Christmas Pudding
Ingredients
1 tbsp glace cherries, roughly chopped
1 tbsp sultanas, roughly chopped
2 tbsp glace pineapple, roughly chopped
1 tbsp currants
2 tbsp brandy or kirsch
1 pint vanilla ice cream
Method
Place the fruits in a bowl, add the brandy or kirsch and allow to marinate for 2 hours.
Place the ice cream in a bowl and beat, to soften.
Add the marinated fruits and marinade and mix well.
Turn the mixture into a 900ml/1/2 pint foil basin.
Freeze.
Unwrap when frozen and place on a serving dish and thaw at room temperature for 15 minutes.
Cover the pudding completely with rosettes of whipped cream and decorate with small pieces of glace cherries and angelica.
Serves 4 to 6
I hope that you like the Iced Christmas Pudding too. It may not be so appealing in the Northern Hemisphere for your winter...
